2 teaspoons instant coffee powder
1 cup fresh cream
1 cup chopped dark chocolate
1 cup whipping cream
Dark chocolate chips for topping
To prepare coffee decoction, mix together coffee powder in 1 tablespoon water in a small microwave proof bowl. Place the bowl in the microwave and heat for 20 seconds. Remove from microwave and set aside.
To prepare coffee chocolate ganache, boil cream in a non-stick pan.
Take chocolate in a microwave proof bowl. Add hot cream and mix well. Place the bowl in the microwave and heat for 30 seconds. Remove from microwave and mix till the chocolate melts.
Add coffee decoction into the ganache and mix well.
Take whipping cream in a bowl and whisk well using an electric beater till stiff peaks appear.
Add the ganache into the whipped cream and fold well. This is mousse.
Fill a piping bag with the mousse and pipe out in individual short glasses. Place the glasses on a plate and refrigerate for 30 minutes-1 hour.
Top with some dark chocolate chips and serve chilled.
